Hello Everyone!!

Thank you all once again for coming out this week and supporting Gwinnett Locally Grown and our local vendors. I finally had the opportunity to meet some of you and talk a little about food (of course!), and all the good things you guys are creating with the products you pick up at the store. I am a big time foodie, I can spend hours talking about food and recipes and all that good stuff. So please feel free to bring in your recipes, ask questions and/or mingle! Don't be shy!

I was doing some research this week on duck eggs. Most importantly I was interested in finding out more about their nutritional content. As it turns out, duck eggs are rich in Omega-3 fatty acids (71.4mg/egg), Iron, and B-vitamins especially pantothenic acid (B5). Our bodies need B5 to break down protein, fats, and carbohydrates from the foods we eat. Duck eggs are very good for baking, since they contain more albumin and this in turn makes the final product lighter and fluffier. Give it a try! and report back with results please!
